Tell us about you:
We are a bit of a fusion.
Carlos is a self taught baker originally from Buenos Aires and I am a very proud Liverpudlian.
We have developed our own recipes influenced from places we’ve been and things we’ve seen.
Carlos puts his life experiences in his baking.
We don’t bake in the conventional way but it seems to work for us making it individual and unique.
Our logo is the hands of Carlos with our granddaughter Abigail and looking at this picture it says it all…
 
Business Concept:
Everything is prepared and baked on the premises, from our own recipes, for the same day.
We have created a space where you can see us working and baking, turning raw ingredients into the finest products.
Wake up your senses as you walk through the door, experiencing the enticing aroma coming out of our ovens and watch it all happen before your eyes in the open theatre-style kitchen.
The pastries are laid out bare in front of you on our handmade counter so you can help yourself to the one that appeals to you most.
Our products aren’t uniformed, which is the beauty of them, each one is different making them perfectly imperfect.
Nothing is named, only described, it’s really basic products everyone can relate to without fancy frills.
At the end of the day, anything not sold goes to charities because freshness is everything and in our view, even a day old is never the same.
We are us – that’s what makes it what it is.

Where does one start?
From the interaction with customers to being diverse suiting their demands, from solving problems that come up to seeing the excitement when they enjoy every bite.
Every day is a challenge and a learning process because you never know it all.
Keeping an open mind to changes and learning to adapt because things you planned, sometimes take different directions.
One of the things that makes having a business so exciting is there is no regular routine, you must innovate and reinvent yourself all the time.
Your thoughts on the local independent food/drink scene:
We don’t know much about other places but Liverpool is definitely the place to be, it’s indescribably fantastic!
The diversity, creativity and openness of the people in this city is outstanding.
People here are risk takers and put all they’ve got into it, that’s what makes the food & drink scene so interesting and different.
There is so much choice, so many tastes that sometimes it’s hard to keep up.
There’s something in the air in Liverpool that is a little bit different.
Your customers favourite dish/pastry served at RHM:
It’s hard to say, it depends on who comes through the door.
Our handmade pitta breads are very popular, our customers describe them as ‘fluffy clouds’.
Also, the Dulce de Leche Croissant is a firm favorite at the moment.
